Using the ancient six-row barley variety known as Bear Barley from the Isle of Islay, which is challenging to cultivate and yields very little. - Malting: Non-peat - Yeast strains: Mauri, Kelly - Bottling: Made with spring water from the Isle of Islay, non-chill filtered, with no coloring agents added - Worldwide limited edition: 18,000 bottles - Certification: Grown in partnership with the Agricultural Research Institute of the University of Highlands and Islands - Notes: Only three distilleries in Scotland utilize Bear Barley, including Bruichladdich. - Arran Distillery: Released 46% ABV in 2012 and 56.2% in 2014, both now sold out. - Springbank Distillery: Used locally grown Bear Barley in Local Barley 11 Year, sold in 2017 and is now sold out. The origin of Bear Barley can be traced back to the dawn of agriculture, around 5,000 years ago. Bear Barley is one of the oldest cultivated grains in the UK and has been used for centuries since the beginning of distillation in Scotland. In the 20th century, the focus shifted to efficiency and commercial gain, leading to the cultivation of higher-yield varieties that prioritized production over flavor. Since 2006, we have partnered with the Agricultural Research Institute of the University of Highlands and Islands to reintroduce Bear Barley in the distillation of single malt whisky, always prioritizing flavor. Bear Barley is a robust grain. It adapts well to poor soils and environments with limited sunlight and short growing seasons, thriving even in the fleeting summer sun of the harsh northern regions. Early on, the strength and resilience of the barley grains were evident; they broke the mill. Extracting the charm of this ancient grain required time and patience. Features: This vintage boasts a rich, honey-like, and dense texture, with aromas of apple, pear, and peach that are characteristic of Bear Barley. This is complemented by the sweetness of toffee and apricot jam.
